Breakfast Tortillas



Preparation time: 10 minutes
Cooking time: 13 minutes
Servings: 6

Ingredients:
2 pound red potatoes, cubed  
4 eggs, whisked  
6 ounces ham, cubed  
6 tortillas, for serving  
¼ cup yellow onion, chopped  
1 cup water, for the pressure cooker  

Directions:
1- In a bowl, mix eggs with ham, onion and potatoes and whisk well.  
2- Add this to a baking dish and spread.  
3- Add water to your pressure cooker, add trivet, add baking dish inside, cover and cook on High for 13 minutes.  
4- Arrange tortillas on a working surface, divide eggs mix on each, wrap and serve for breakfast.
