Lemon and Olive Chicken



Preparation time: 10 minutes
Cooking time: 16 minutes
Servings: 2

Ingredients:
2 chicken breasts, skinless and boneless  
A pinch of salt and black pepper  
A pinch of cumin, ground  
3 tablespoons butter  
Juice from ½ lemon  
2 lemon slices  
½ cup chicken stock
½ cup green olives, pitted  
3 tablespoons red onion, chopped  

Directions:
1- Set your pressure cooker on sauté mode, add chicken breasts, season with salt, pepper and cumin and brown for 3 minutes on each side.  
2- Add butter, lemon juice, lemon slices, stock, olives and onion, stir, cover and cook on High for 10 minutes.  
3- Divide chicken mixture between 2 plates and serve.
