Tikka Masala



Preparation time: 10 minutes
Cooking time: 22 minutes
Servings: 2

Ingredients:
½ pound chicken breasts, skinless and boneless  
½ tablespoon butter  
½ tablespoon olive oil  
1 small yellow onion, chopped  
A pinch of salt and black pepper  
½ tablespoon garam masala
½ teaspoon coriander, ground  
½ teaspoon turmeric  
½ teaspoon chili powder  
3 garlic cloves, minced  
1 inch ginger piece, grated  
7 ounces canned tomatoes, crushed  
1 and ½ tablespoon yogurt  
1 tablespoon almond butter  

Directions:
1- Add the butter and the oil to your pressure cooker, set it on sauté mode, heat it up, add onion, stir and cook for 5 minutes.
2- Add chili powder, salt, pepper, garam masala, coriander, turmeric, ginger, garlic and tomatoes, stir and cook for 1 minute more.  
3- Add chicken breasts, cover and cook on Manual for 16 minutes.  
4- Transfer meat to a cutting board, shred using 2 forks and leave aside for now.  
5- Blend the mix from the cooker using an immersion blender, add yogurt and almond butter and stir gently.  
6- Return chicken to the pot, stir a bit, divide into 2 bowls and serve.
