Brussels Sprouts Soup



(Prep + Cook Time: 30 minutes | Servings: 4)

Ingredients:
2 tbsp. olive oil  
1 yellow onion; chopped  
2 lbs. Brussels sprouts; trimmed and halved  
4 cups chicken stock  
1/4 cup coconut cream  
A pinch of black pepper  

Instructions:
1- Heat up а pot with the oil over medium high heat, add onion, stir and cook for 3 minutes.  2- Add Brussels sprouts, stir and cook for 2 minutes.
3- Add stock and black pepper, stir; bring to а simmer and cook for 20 minutes.  
4- Use an immersion blender to make your cream, add coconut cream, stir well and ladle into bowls. Serve right away and serve.
